1st attempt at competition style chicken thighs. 180F for 1 hour then 350F for 1 hour, glazes after 40 minutes.

Hot and fast chicken on the kamado last night. Dry brined the bird for about 3 hrs, rubbed heavily with Plowboys Yardbird. Gave it about an hour at 350F, oak and apple wood. Stoked up the coals for some grilled vegetables.
