I smoked Mozzarella, Monterey Jack, Cheddar, and Gouda cheeses today. Cold smoke cabinet for 2.5 hours. I used a combination of Hickory, Cherry, Oak, and Maple woods. Rested 24 hrs in butcher paper, then Vac sealed for 2-3 weeks while the smoke permeates. It’ll be ready for the holidays.
